Rose Macarons

In the past few weeks, I’ve been working on moving my little space to a self-hosted domain. Of course, as a person who has ZERO idea on how to self-host & what not, this wasn’t an easy decision.

There were several reasons why I made this choice: Firstly, while wp.com offers the option of simply giving me a domain name, I figured that the long-run costs would exceed that of self-hosting. Next, with more reads & followers, I figured it’d be a good time to update the space & give myself the option of having more customization. As much as wp.com offers beautiful free themes & widgets, a self-hosted blog using the wp.org Jetpack allows me to have awesome plug-ins & a whole lot more customization. Also, I didn’t want to build up a whole lot of subscribers to my wp.com & then have to shift them over (I can’t actually do that so they’ll have to do it themselves… a whole lot of trouble). Finally, my Facebook Page has reached that 1000 likes mark. A huge thank you to everyone who has supported me, be it my friends, family or just fellow bakers & recipe lovers! (Of course, I wouldn’t want it to be stagnant at 1000 likes – do share the love if you enjoy reading this hehe)

Pink Guava and Lemon Macarons

Hi everyone, I’m back!

Yes, I know it’s been a really long while since I’ve updated – even after I promised to do so now that I’m back in Singapore for good :/

Truth is, the day after I got back, I started my summer internship. Working full-time hours on the weekdays & trying to spend time for myself on the weekend resulted in me not being able to do much baking. Also, times when I did bake, I didn’t really photograph the food items & just left it for everyone to consumer oopsie daisy!

Anyway that aside, SCS Dairy (our local butter brand) has recently launched a Star Bakers’ Challenge. Basically the challenge goes for 5 rounds and you need to pass each round to qualify for the next. Needless to say, I decided to join this challenge. It was a little difficult given that the first round was just a ‘free for all’ challenge. Also, I had no idea if they were going to kick anyone out from that first round.

Thus, I decided to create something a little more challenging – just in case other people put up a very tough challenge (which mind you, they did!). As you all know (if you read my blog enough), I’m pretty much a sadist and like to make life really difficult for myself. Of course, the queen of difficult pastries – Macarons!

These were a little bit more complicated than my usual macarons. Instead of having just one filling, I decided to have the middle filled with a ganache & then the outside with buttercream so that when you bite into half, you get two flavours as well as a pretty cross-section.

70% of Cocoa Goodness

Hi everyone!

As you all know, I was in Bangkok for the past 4-5 months doing my Student Exchange Programme at Chulalongkorn University. Well, my exchange is finally over & I’m now back in Singapore 🙂

Having not been with my oven for a super long time (well I did come back & bake but yknow, not having it there all the time makes it different), I jumped at the opportunity to make my favourite challenging macarons for Mothers’ Day.
