I’m back!!!

Hi everyone!

I know I’ve been away for a really long time (the last post was only made possible because Joanna was a dear and baked up some gorgeous Macaroons) but I’m back with a new post 🙂

So you all know that I do not have an oven in Thailand but, my sister came over and brought me my handmixer + I just invested in a Zebra mixing bowl (my heart hurts from spending 20 bucks on a stainless steel bowl but you gotta do what you gotta do). So stay tuned to simple non-bake recipes in the future!

This time, I’m posting a recipe on Blondies. It’s one of those amazing one bowl recipes where you just chuck it all into a bowl, mix it about, and voila! You get a perfect dessert. These blondies are amazing, chewy & not too sweet (well, I could be getting a bit too used to Thai tastes – super sweet, salty and spicy)! Not only do they taste great, they’re so versatile. You can put in chocolate chips, butterscotch bits, almonds, anything that you think possible.

One reason I decided to get down to these blondies was partly because I had seen how decadent they looked on Smitten Kitchen but also partly because I needed to make something that wouldn’t melt or spoil in the Bangkok heat for my Entrepreneurship class.

Coconut Macaroons

Hello folks!

Today I’ll present you with an awesome macaroon recipe. Now, don’t get me wrong. I didn’t spell Macarons wrongly. These are Macaroons (two O’s). Many people often get confused between the two and I will be publishing a post soon to differentiate the two.

If you’ve been following my blog, you’d know that me not having an oven has proven to be a huge problem. However, one of my lovely NUS friends, Joanna, whipped these up. While not made by me, I can guarantee the quality of these lovely bite sized treats. Joanna did the bake sale with me in December & from the pictures she has provided, it is no doubt that these coconut delights will melt in your mouth but yet, maintain a good crisp texture. Sounds something like a macaron but also, not quite.

Blueberry Chocolate Muffins

Hi everyone!

As you all know, I’m currently on my exchange in Bangkok, without an oven. As such, I haven’t really been updating this space as much as I’d have liked.

Ever since coming here, I’ve been on the hunt for an oven. The search was crazy. No one I knew had one and if they did, it just wouldn’t have been convenient for me to go over. I was really lucky this time cos Inez (one of my NUS girls) had a friend she made while she was on exchange in Taiwan, from Chula. Jenny was super sweet & invited me to stay-over at her place & to bake.

The funny thing was that no one had ever used the oven in her house. I was the first person to use it, to figure out how to operate it, and so on and so forth. Also, because no one bakes, there was no KitchenAid for me to use. Everything had to be done by hand.
