Matcha Chiffon Cake Recipe

Happy New Year everyone!

Seems like I’m on a roll with making chiffon/sponge cakes.

Sunday was Jo’s 21st birthday surprise.

1500842_10152151856005915_2064677359_o I intended to make her a macaron tower, but only found a miniature little styrofoam cone in Art Friend. A wee bit too small for the party but bought it anyway. So hopefully I’ll be using it some other time!

Anyway, the cake is a basic Matcha Chiffon Cake from Keiko Ishida’s Okashi, sweet treats made with love. I read many reviews on how this chiffon was a good one before attempting it. Overall, the texture of the chiffon is very light and tends towards more of the dry side (very much unlike the Pandan Chiffon).

Green Tea Cake with SMBC I used a SMBC (same as the Rosette Orange Cake) to frost the cake and imbibed the chiffon with a 1:1 sugar syrup.

Rosette Orange Sponge Cake

Hi everyone!

It’s been a really long time since I updated. So sorry about that. Straight after exams, I left for my family holiday (read all about it at Midi & me) and haven’t really had time to bake/update since I came back. I totally procrastinated on that 12 days of Christmas thing and have decided to put it off.

On Saturday, I had a bake sale with one of my lovely NUS Biz girls, Joanna. It was pretty nice to have most of our stuff sold out. Thanks for the support if you came down to get some sweet treats for yourself. I’ll do an update on that at a later time.

Thai Iced Tea Cupcakes

DSC_0118

When people identify/greet me overseas, it’s never ‘Konichiwa’, ‘Ni hao’, the usual greetings that chinese people get. Instead, I get starred at for a while, before a ‘Where are you from!’ follows, and then a string of SEAsian countries ‘Vietnam! Thailand! Laos! Cambodia! Philippines?’. I always reply, disappointing them, that I am actually Chinese and from Singapore.

While I may not be Thai, that hasn’t stopped me from loving Thai food, drinks and desserts. A staple for me whenever I have Thai food, is definitely the scrumptious Thai Iced Milk Tea. All the spices mixed together with the tea, and the beautiful sweetness that is just a little too sweet, but yet so perfect, all come together to make this marvellous drink.

And that’s where I drew inspiration for these Thai Iced Tea cupcakes.
